It really freezes ice cream quickly, and I love not messing around with ice and salt. It makes a quart, which is good for our family of four. If it made more, we would still eat it all...so the quart size helps us stay slightly slimmer. We did not have any problems with the ice cream freezing hard enough. We have a thermometer in our freezer, and keep the temp at zero F. Do be careful to have all the ice cream maker parts together and ready to use BEFORE you pour in the mix. I fumbled around for about 2 minutes after pouring in a strawberry sorbet, and couldn't get the paddle installed because the mix was solidifying. Had to stir it with a wooden spoon instead! We use cream from our friend's cow, berries we froze over the summer from our garden, honey from our bees, and organic sugar. The cost to buy this quality of ice cream would be astronomical. I give it 4 stars instead of 5 for the following minor reasons: can be difficult to properly install the rubber ring on top of the freezing insert (I've taken to putting the ring on the insert, upending the freezer insert so it lays rubber side down, sliding the plastic sheath on, then righting the whole business), and it would be nice if they sold it with 2 inserts, so you could make another batch of ice cream during the time it takes to thaw the other insert for washing, and re-freezing. I know you can buy inserts seperately, just seems like it ought to be packaged with 2. 0936184191 US

With only your imagination, you can make the ice cream flavor you want with the advices that you'll get here. I already make 4 batches (vanilla, not bad (maybe because I use extract rather than vanilla bean); chocolate, I'll use less sugar next time (but better than the commercial ice cream) and rum raisin (twice, the best yet, superb texture and flavor), but I'm improving reading the book time after time. Believe me, you don't need another book; here you will get the "why" needed. Some advices from my experience: 1. Don't let the custard freeze after done; I found out that when churned, you will get tiny ice bits. Let the custard reach 40F and put it into the machine - Chill only. 2. You can help the machine put more air into the mixture if you stir it with a spoon (made of wood preferibly). 3. For those in my home country (maybe this apply for you also), I recommend to use the milk cream that comes in a UHT/brick container instead of the one that comes in an can; you will get a better color and texture. I also followed some advices found here (like "start your machine and pour the custard in" and "buy an instant read thermometer") to get the ice cream that my family and I like. Don't Let Flawed Format Stop You Shred*** Here's the dealio: this ain't no coffee table book, but if you can get over the format, the recipes rock. Looks like a number of people have expressed some frustration over the top-bound format of the book. I confess that this well-intentioned format (which operates as a stand so you can put the recipe up on the counter as you cook), was also a little frustrating for me. But wait, there's more! Here's what I like about it: Her recipes work perfectly every time. I've now tried several of them and there's no messing up. That's "key" when you've got obligations outside the kitchen (it just has to work the first time). Moreover -- and this is what's important for a cupcake book -- the batter recipes are all "thick" batters, which makes them completely scoopable. This saves time, a messy clean-up, and consequently, my nerves when I'm baking. The Swiss meringue buttercream recipe is the most stable and delicious buttercream I've made and it doesn't call for a candy thermometer, which also makes it pretty easy. People literally rave about the frosting when I make it, and I can take it to a Summer picnic or a Winter party and not have to worry about it separating, tasting gritty, or bending to the will of the weather. She also gives little extras that you can choose to add to your cupcakes to make them sophisticated. For instance, she suggests (and gives recipes for) flavored glazes that can be brushed on the cupcakes warm from the oven, and for curds that can be used to fill the cupcakes. I don't waste these on kids, but for adults, wow, it takes them over the top. Her decorating ideas go from very simple to highly stylized, but in all cases, they're completely doable no matter what your skill level. For instance, she has these beautiful little petit fours for which she uses a pourable glaze instead of a frosting. They take only minutes to decorate and they look like they came from a French pastry shop. Another one (I used for my kid's birthday last year) was a cupcake baked in a flat-bottomed ice cream cone and piled with stabilized chantilly cream so they looked like soft-serve cones. Easy and delicious. Even the parents were impressed. There are lots of books with more impressive decorations, but these are all decorations that, when completed, will look like the photograph. I also like her concepts for cupcakes as being a dollop of a good thing. If you think about cupcakes, they're really just a "bite" of something. Neumeier really gets that, I think. She has cupcakes like PB&J (where there's a jam filling, and PB frosting, giving you a wonderful taste sensation. I like her linzer cupcakes (where there's a cookie on top of the raspberry jam glazed cupcake), because it's soft and crunchy at once. In short, yeah, I hear all those people who don't like the format, and I did give it only 3 stars because of that. It's really tough to find the recipe you want. Things I like: * Most of the items seem relatively sturdy (except the bp cuff--more on that below) * There is a wide variety of items, including many not found in other doctor's kits (scalpel, scissors, clamps, bandages) * The plastic bandages are brilliant--perfectly sized for stuffed animal limbs * It has a case, which keeps it contained and lets her tote it around * My daughter and her friends like it and play with it Things I don't like: * While I don't worry about the pieces breaking, they are not particularly well made/molded * The case is very difficult to open/close and the latches are losing their function over time. * There are some aspects of the way the toy functions that are not ideal. The thermometer has a rotating dial to change the read out (which is cool) but the readings are kind of nonsense (why not just red yellow and green?) The BP cuff has only a tiny dot of velcro, which makes it very difficult to fasten. * The BP cuff is one of the kids' favorites, but it is not long for this world. The velcro dot has fallen off, which means that it must be held shut (not a huge deal--they couldn't really close it before), and the squeeze ball is made of very thin plastic, which is not going to hold up to three year old love. * There are three parts of this kit that make noise. My daughter and her friends love all of them. I hate them so much. I hate the heartbeat/cough noise from the stethoscope that my daughter loves so much. I hate the beeper. My daughter doesn't even know that the cell phone could make noise, because it was the worst of the lot and I took the batteries out of it before giving it to her. I don't know why this has to make noise. * Cranky point: the sticker on the front of the case showed a boy playing with the kit, rather than the cross shown in the picture. I would have preferred the cross. All of that said, she loves this kit. So I'm not going to be replacing it any time soon. And I didn't uncover anything that I would have preferred. I just wish that someone made a higher-quality set that I would love as much as she does. ETA: Over a year later. This kit is still a huge hit with the kids. Most parts of the kit are still in very good shape. Surprisingly, the latches on the case are still with us. They are still bad at their job, but they haven't broken yet. This vent allows hot air to escape your unconditioned adache, you can lower your temp by perhaps 50 degrees. No holes drilled. No extra receptacle needed, no extension cord needed. I plugged the thermostat into the receptacle and piggy-backed the freezer cord on top of it. I hung the control box on a convenient nail in the basement and ran the thin copper wire between the door gasket and the freezer door frame. I put a simple freezer/refrigerator thermometer inside so I could check the temp and it has stayed right on it. You twist the knob to select your desired temperature. If you wanted to go to the trouble you "could" drill a smallish hole for the bulb of the sensor to go through the body of the freezer instead of running the wire under the door gasket.
