Suehiro D1069 Deluxe Japanese Stone #1200 3 Professional experience with this stone. Mi*** First off, I am a sushi chef that has worked in the business for 4 years. I have owned Japanese style sushi knives, traditional chef knives, santokus, gyutos, debas, and small knives. This stone is not great. It's not horrible, but for a japanese whet stone at medium grit, it wears away relatively quick. Granted, I did not use a nagura stone when I sharpened, but after 30 min of sharpening one of my knives, I could feel the stone beginning to bow in the middle, even as I made sure to sharpen across the whole surface of the stone. The stone's slurry isn't a great quality and the metal ground away from the knife doesn't really stay on the whetstone. It's important for a stone to have a good slurry with metal mixed in for the benefit of your knife, but I feel like there are better options than this stone. I am not a professional knife sharpener, I learned how to sharpen my knifes on my own, so some people may disagree with what I think. If you feel I have said something that is incorrect, please contact me and I am willing to learn. Don't get me wrong, this stone works, and I was able to develop a fine and sharp edge on my knives, but I simply think that other Japanese whet stones, such as King Brand Deluxe Waterstone, 1000 Grit are less likely to wear away as much when sharpening. In the end, I feel that for a few dollars more, you can get longer usage out of a different whetstone. For those that have only a few knives and do not sharpen them very much, I think this is a good stone to learn with. It's a soft stone that is lenient on a knife edge and blade. For learning purposes, I recommend this one. You probably won't get to the point of sharpening as frequently as me for a few years. But for professional use I prefer others. B0001MSA72 US

The one at work did by only pressing a clip and lifting that end and spinning it to the next stone which was simpler. I wish mine came with that ability. Polly*** As stated, the little red Wusthof logo washed off the knife a few weeks we bought it. I also noticed the red printing was kind of offset, like it didn't get placed squarely on the knife handle when it was manufactured, which marred the experience of getting a new product. I had some initial correspondence with the company, mainly just getting the run around from them, as they strove to find creative ways to blame us for the problem. The knife has never been in the dishwasher, had never had harsh chemicals used on it. We use the purple or blue 3M scrubbers because we have other nice pans, flatware and cutlery. My husband was using the knife the other day and was surprised it had not been returned. As per, he stated, "If I would have wanted a generic knife, I would have bought a generic knife". I initiated a return today. I will update this if/when they honor the return. Other than the logo defect it is a decent knife and holds an edge quite well. Knives like this are not sharpened with household knife sharpeners. You need a good quality steel. We use J.A. Henckels 9-Inch Poly Sharpening Steel, which is short enough to fit in a drawer. At this moment, it is probably the sharpest knife we have, it is well-balanced and fits the hand nicely. The 5" Santoku blade is a nice compromise size. It fits in a drawer easily and is great for for light prep of vegtables but is not long enough if you are going to long-cut carrots, potatoes or eggplant.. anything over 4 1/2 inches long or so. Well, it wasn't completely razor sharp but it definitely cut hair. I showed my wife how to use it and she absolutely loved the simplicity of it.
