Everything beyond that comes down to preference, or your ability to pay more (for a better knife). Here is my experience: The knife is very sharp, out of the box. Edge retention, so far, is fine, but I don't expect it to be great (continue reading for more details). If it's not obvious, please note this is NOT a hammer forged (Damascus) steel knife. The pattern is a laser etched design. I think they should make this more clear in the product description (other knives with the same issue do), but hopefully no one purchasing this knife thinks they are getting that for $15. Let's break the rest of this down into categories: Steel Type: 5CR13 is not a Japanese steel, a premium steel, a high carbon steel, or a particularly hard steel. Unless this is not the steel used and the product description is wrong, all of these claims are misleading. To be fair, they also list 7CR13, which is a high-carbon steel, but they list these as "German" so my assumption is that this knife uses the "Japanese" steel. Note, all of these are Chinese steels. Edge Retention: My assumption is that it wont be all that great, based on the steel type. I think it may seem much better than it actually is initially due to the "micro-serrated" edge. What this will mean, in practice, is that the edge will retain it's sharpness for longer, due to the serration. However, once it dulls and you need to sharpen it, the serration will be gone (or possibly even impede you from sharpening it well), and the edge will no longer hold as well. Handling: I think it handles a bit awkwardly... The handle is much larger/thicker than my other knives. The knife is pretty heavy, especially for a Japanese-style knife, and I think the balance is off. The shape is also a bit weird, but that didn't affect me was much. However, my wife who is not a chef or a knife enthusiast, likes it. So, this is a matter of preference. Packaging: I think it was packaged well. The box is nice, and the blade was well protected. Overall, not a bad knife for the price. However, for about 2x the cost (which is a significant increase, but still not expensive) you can get a decent Japanese knife, made in Japan, with much better qualities (HRC in the 58-62 range)... Just a matter of preference and the amount you want to spend. Also for about 2x the cost (sometimes less), you could get an actual 67 layer VG-10 steel knife made in China. Something to think about. I considered my knives sharp, but this knife occupies a different category entirely, and it took a mistake to demonstrate what sharp should actually mean. I was cutting chicken into short thin strips for fried rice when a piece that was too thick required reduction. A finger got in the way. The knife did cut my skin — but it cut between layers rather than through them, which is the mechanistic point. A duller blade would have injured me more severely, and the reason is not counterintuitive once the mechanics are understood. Sharpness concentrates stress into a vanishingly small field at the edge. When that stress field is sufficiently narrow, the blade exceeds the local failure threshold of the tissue before any significant deformation can propagate. The tissue separates cleanly along the plane of least resistance — in this case, between dermal layers — rather than deforming, stretching, and ultimately tearing irregularly across a broad front. A dull edge, by contrast, cannot concentrate stress sufficiently to exceed the failure threshold locally, so deformation propagates ahead of and lateral to the edge; collagen and elastin fibers tear rather than separate, and adjacent structures sustain collateral trauma. The wound geometry that results from a sharp blade is also the geometry that heals cleanly. Two days later, nothing remains but a small patch of skin slightly more reflective than the surrounding surface. The octagonal wa handle is not merely an aesthetic choice; these beautiful handles, made from fine-grained ebony and inlaid with turquoise, have a highly functional purpose. The geometry provides continuous tactile orientation feedback — the facets register against the hand so that blade angle is known without visual confirmation. This matters most in the two grip positions that Japanese knife technique moves between: the pinch grip at the ricasso — the unsharpened portion of the blade just forward of the handle — for forward push cuts, and the full-handle draw grip for long slicing strokes that use the entire blade length. Transitioning between these is fast and repeatable because the hand always knows where it is relative to the edge. Western handles — including sculpted ergonomic designs — solve a different and lesser problem: they secure the knife in the hand, but security in the hand is not the same as orientation feedback to the wrist. This gyuto was built to a standard that Japanese kitchen culture expresses as three separate blades — the deba, the yanagiba, and the usuba — each holding cut quality constant across different materials by varying the geometry. The deba is single bevel and asks a different technique of the cook: the fish is beheaded first, the filleting sequence following from there rather than from the flexible blade path a western fillet knife takes. My GF got me this Emojoy set for Christmas. These are really nice! I have uploaded some pics to show the difference between the Henckels Pro 7" santoku and the Emojoy 7" santoku. The Emojoy is on the left. As you can see there are slight differences in the knives. The Henckels is a little heavier and the tang is a little thicker. I have only two complaints about the knives. First is the top is very sharp, the edges of the spine could have been rounded over a little. In the last pic I'm showing how I like to hold a knife, right by the ricasso. The Henckels is more comfortable when holding a knife like I do. Secondly, the Emojoy handle is a little more rounded than the Henckels. I don't love that as much, but it's not bad. In the end, is it a Henckels? No. My one Henckels knife was $40 more than this entire set. For the money, I'd have to say I'd go with the Emojoy if I had to do it over again. The knives are quality and very sharp. The sharpener is a nice feature to have.
